Heating is usually classified as a critical control point (CCP) — meaning no later step can fix it if it goes wrong, and there’s a direct health risk to guests. That’s a higher bar than an ordinary check.
Poultry is the sharpest example: it carries a high load of pathogens like Salmonella and Campylobacter, and in minced or mechanically processed meat those organisms are spread throughout, not just on the surface. Heat has to reach the core to reduce them to a safe level — the same principle as pasteurisation.
What that means in practice
- Treat the heating step as a CCP with a defined target and holding time
- Measure the core, not the surface, and do it consistently
- Have a clear corrective action if the target isn’t reached — reheat or discard, documented
- Low-temperature methods (sous-vide) are safe only within tightly controlled parameters
